Cottage Pudding with Chocolate Sauce

Preheat oven 3500 (moderate oven)

Sift together into bowl;

1 ¾ cups sifted all purpose flour
2 teaspoons baking powder
½ teaspoon salt

Add;

¼ cup soft shortening
¾ cup sugar
1 egg
¾ cup milk
1 teaspoon vanilla

Beat until smooth. Pour into greased and floured 9'' square pan. Bake 25 to 30 minutes. Cut into 3'' squares. Serve hot with Chocolate Sauce (recipes listed below)

Two chocolate sauces to choose from.

Rich Chocolate Sauce

Melt over hot water;

½ pound German sweet chocolate

With;

¼ cup water
¼ cup sugar

Stir until smooth. Remove from heat.

Blend in;

¼ cup cream

Amount: 1 cup

Glossy Chocolate Sauce

Created during WWII, when sugar was at a premium.

Melt over hot water;

2 squares unsweetened chocolate (2 oz)

Mix in and heat slowly, stirring constantly;

1 cup light corn syrup

Remove from heat immediately and stir in;

½ teaspoon vanilla
1 Tablespoon butter

Amount: 1 cup
